His home currency loses value against the euro. The euro itself hasn't changed — but now 1 euro costs him 112 units of his local currency instead of 100. The trip costs the same €5,000 in euros. But he now has to spend 12% more from his own pocket to get those euros. Banks and booking platforms charge today's rate. There is no way around it.
A new conference is coming. BB estimates €3,000 in expenses for a 4-day trip. The euro is currently at a good rate — about 100 units of his local currency. He buys 3,000 FNX now, paying 300,000 in his currency. Budget locked. Rate locked.
His currency weakens even further. Now 1 euro costs 115 units of his local currency. Everyone booking hotels, flights or co-working today pays 15% more from their own pocket than they would have months ago. BB pays with his FNX — bought at 100. A €100 hotel night costs him 100 from his budget — not 115 like everyone else booking right now.
BB's visa is delayed and he misses the conference. He requests a refund. Fontiex returns 2,940 FNX (€2,940 after a small ~2% fee). His currency has weakened further — now at 115. So that €2,940 refund, converted back, gives him 338,100 in his local currency. He originally paid only 300,000.

Hotel prices in euros go up during busy periods — conferences, holidays, events. That's normal and won't change. But the bigger issue for non-EU travellers is that their home currency may have weakened since they started planning. That means the same hotel in euros costs significantly more from their own pocket.
